As we begin to enter an era where childhood obesity is beginning to become an increasing health problem, schools are now making a conscious effort to make their school menu meals a lot healthier. Here we have put together a sample meal that is quick to prepare whilst remaining nutritious. This meal idea can be produced in the school kitchen for school dinners or can be used for a packed lunch if it is prepared at home.
Chicken Salad Pita
Ingredients:
- Chicken Breasts
- Iceberg Lettuce
- Green / Red Pepper
- Sweet Corn
- Wholemeal Pitta Bread
Basic Instructions:
- Fry the chicken until it is cooked through.
- Whilst the chicken is cooking, prepare the salad leaves and cut the pepper into edible size pieces.
- Drain the sweet corn if it is stored with juices.
- Mix all of the salad ingredients into a bowl (you can add a dressing if desired)
- Lightly toast the Pitta.
- When the chicken and pitta have cooled, mix in with the salad you have just prepared.
- Cut the pita in half and stuff both pieces of the pita with this delicious filling.
