More and more people are either choosing or are being forced (due to health problems) to have a gluten-free diet, making it particularly difficult for restaurants and catering companies to adjust to the gluten-free market.

Some companies will argue that the gluten-free market is too small to make drastic changes to their menus, with many cafes and restaurants simply not providing a gluten-free option at all, thus turning away potential customers.

Many bakeries are now introducing gluten-free bread because of the growth of this niche market so it would be sensible for restaurants and cafes to follow suit if they are to capture this audience.

This is a great chance for any chefs out there to really get ahead of the game and have great gluten-free dishes, in particular desserts, because the vast majority of desserts are not free from gluten.
