Keeping Things Fresh – Menu Rotation

Ask yourself:

When was the last time you changed your menu?
Is your menu out of date?
Could your menu do with a revamp?

Updating your menu on a regular basis can play a critical role in your restaurant’s success. This doesn’t mean that you should change it every week, quite frankly that would cause havoc in your stock ordering. How often you change your menu will depend on a variety of factors for example the size of your restaurant, whether you are an independent restaurant and so on.

Before you make any menu changes it is important that you thoroughly plan first in order to see how feasible it actually is for you restaurant to make your proposed changes. You will need to think about:

The cost – don’t choose meals that are going to cost you a fortune in ingredients
Taste testing – make sure you have lots of test / trial runs to be sure that you are able to produce a high quality and tasty meal.
Time – Make sure you have enough time to create the suggested new meals, for example if you only produce meals that take 20-30 minutes to cook adding something to the menu that could take 2 hours to cook is going to disrupt the flow of your business.
Compatibility – Do the new meals fit in with the theme / style / flavour of your restaurant

Having said this, if you are part of larger chain then changing your menu is a decision that will have to be made by head office. However if you are a small independent business don’t be afraid to experiment and change your menu around every so often to keep things fresh and exciting.
